Hoppin’ John
Ingredients
1 cup cooked black eyed peas 
1 cup rice of your choice, brown or white 
1 small bunch collard greens, cut into ribbons 
2 tomatoes, diced or 1 small can diced tomatoes 
1 cup corn 
2 tablespoons olive oil 
1 onion, diced small 
2 or 3 cloves garlic 
1 tablespoon apple cider vinegar sea salt and black pepper to taste 
Directions 
In a deep skillet over medium heat, sauté onion in the olive oil until translucent, about 5 minutes. 
Add the garlic and continue to cook for another 2-3 minutes. 
Sauté collard greens until wilted and tender.
Incorporate the remaining ingredients into the skillet except vinegar and warm until heated through.
Finish with vinegar.
Taste for salt and pepper, adding a pinch at a time until the dish is just right.
Enjoy with cayenne or hot sauce if desired.
